1.Preheat the oven to 180°C (350°F).
2.In a food processor, combine pistachios, Parmesan cheese, salt, and black pepper until finely chopped.
3.Coat the salmon fillets with olive oil and press the pistachio mixture onto the top of each fillet.
4.Place the salmon on a baking sheet and bake for about 15-20 minutes, or until cooked through.
5.While the salmon is baking, cook the orzo pasta according to package instructions. Drain and return to pot.
6.Stir in lemon juice and cream into the cooked orzo. Mix until creamy and heated through.
7.Serve the pistachio-crusted salmon over a bed of creamy lemon orzo. Enjoy!
