1. Prepare the Kebab
Mix the beef or lamb with za'atar, chopped onion, green onion, minced garlic, chopped chili, fresh mint, fresh oregano, lemon zest, lemon juice, and cumin. Skewer the mixture onto kebab sticks and grill or cook in a pan.

Blend roasted red pepper (with skin removed) with baked garlic, lemon or vinegar, chili, coconut oil, and Greek yogurt until smooth.

Mix tahini, Greek yogurt, lemon juice, grated fresh garlic, and salt in a bowl until well combined.
4. Prepare the Sumac Onion
Combine sumac, sliced red onion, and olive oil in a bowl and let it sit to absorb flavors.
5. Serve
Serve the kebabs hot with red sauce, white sauce, and sumac onion on the side.
