A quick, comforting grilled cheese with crispy Cumberland sausages, an autumnal kale pesto and (of course) lots of melted cheese.

Cheddar
125 grams
Kale
40 grams
Garlic

1.Spread the sausages onto the inside of ½ your slices of bread. Grate or thinly slice the cheddar.
2.Place a frying pan over medium heat. Once hot, add the kale and cook until wilted. Transfer to a food processor with the smoked almonds, peeled garlic clove and olive oil. Blitz until broken down. Season with salt and pepper. Slather onto the remaining slices of bread.
3.Set the empty frying pan back over a medium-high heat with a drizzle of olive oil. Cook the slices of bread with the sausage, sausage side down, for 5-10 mins until golden brown and cooked through.
4.Flip the slices of bread and sprinkle over the grated cheese. Top with the other slices of bread (kale side inside) and drizzle with oil.
5.Reduce the heat to low-medium and cook the toasties for 3-4 mins on either side until golden brown.
6.Serve immediately whilst still hot.
