1.Prepare the beef by cutting it into chunks.
2.In a large pot, brown the beef on all sides. Remove and set aside.
3.In the same pot, add chopped onions, celery, and carrots. Sauté until soften.
4.Return the beef to the pot, add thyme, rosemary, bay leaf, and red wine. Bring to a simmer.
5.Add enough water to cover the meat if necessary. Cover and cook on low heat for about 2 hours.
6.In the last 30 minutes, add smoked bacon, mushrooms, shallots, and diced potatoes.
7.Check seasoning and serve hot.
