1. Preheat Oven
Preheat the oven to 200°C.
2. Prepare Potatoes
Peel the potatoes then, using a mandoline, slice them into thin rounds.
3. Make Batter
Beat the eggs with the milk, flour, baking powder, three-quarters of the grated cantal cheese, salt, pepper, and a pinch of nutmeg. Mix well.
4. Combine and Layer
Fold in the potato slices, mix, then pour into a greased cake mold or one lined with parchment paper. Spread in even layers.
5. Top and Bake
Sprinkle the rest of the grated cantal cheese on top and bake for about 1 hour and 20 minutes.
6. Cover During Baking
Halfway through baking, cover with aluminum foil to prevent the top from burning too quickly. Cooking time may vary with the thickness of the potato slices: the thinner they are, the faster the cake will cook.
7. Check Doneness
Check the cooking with a knife: the blade should insert easily. Unmold and sprinkle with chopped parsley before serving.
