1.Fry the minced garlic and onion until browning then add the curry powder and fry for another few minutes.
2.Add the stock and coconut milk then simmer to thicken and reduce.
3.In a bowl, mix peanut butter, miso, brown sugar, splash of hot water and lime juice.
4.Combine the broth with the peanut butter mixture, add cooked noodles then top with the garnishes, serve and enjoy.
