2.Mix the dough ingredients together with a spoon and quick knead. Cover with clingfilm and let it sit for 20 minutes or up to 2 hours. It will be much softer to work with after that.
3.Flour your surface well as this dough is sticky, knead for a few minutes and then cut into 8.
4.Shape each 1/8 into a round and roll it out, add some pesto, then basil and mozzarella and garlic mix. Pinch together as shown in the reel and gently roll out again.
5.Place on a baking sheet with greaseproof paper and brush with oil. Bake for 7-9 minutes.
