1.In a wok heat the oil and shallots, fry medium heat until fragrant.
2.Add the shrimps, Chinese radish, dried shrimp and tofu stir fry until almost cooked. Put everything aside of the wok.
3.Add the noodles and water. Stir fry until soft and dried. Add pad Thai sauce on top of the noodle stir fry until all cooked and dried. Pull everything aside.
4.Add oil and beaten egg, stir fry to make a sheet on medium heat mix everything together then add bean spout and garlic chives. Turn off the heat.
5.Transfer to a serving dish with roasted peanuts, one dash of lime and garlic chives.
