Chimichurri

1.Boil the potatoes until fork-tender. Drain and let cool slightly.
2.Preheat your oven to 220°C (425°F).
3.Place the boiled potatoes on a baking sheet and use a fork or potato masher to gently smash each potato.
4.Drizzle olive oil over the smashed potatoes and season with salt and black pepper.
5.Bake in the preheated oven for 20-25 minutes, until crispy and golden brown.
6.Serve warm with chimichurri or pesto on the side.
