1.In a blender, combine tomatoes, bread, garlic, olive oil, salt, pepper, Espelette pepper, and wine vinegar. Blend until smooth.
2.Adjust seasoning as desired.
3.Serve chilled, garnished with sliced hard boiled eggs and Iberian ham.
