1.In a large pot, brown the ground meat over medium heat.
2.Add the ginger, garlic, curry paste, and chili paste to the pot. Cook for a few minutes until fragrant.
3.Pour in the chicken broth and coconut milk. Bring to a simmer.
4.Add the noodles and pak choi. Cook until the noodles are tender.
5.Stir in the soy sauce and garnish with basil and peanuts before serving.
